It’s that day of the week, wherein bloggers get together to share their different ways of eating, nutrition, food likes and dislikes, and journeys. It’s not about comparing diets. It’s not about feeling guilty that you don’t eat like someone else. It’s about sharing what you like to eat, what you are learning to like to eat, and the fellowship you get to have with friends and family over the food that you partake of together.
In other words, ‘What I Ate Wednesday,’ is a pretty fun blog get together, and thank you Jenn and Arman for doing the hosting! So come on. Join me, and let’s share all the yummy food that God has given us to enjoy!
This week is going to be a bit different for me. I’m not going to share a day from breakfast to dinner. Instead I’m going to share different pictures of what I’ve been eating in the past week for different breakfasts, lunches, snacks, and dinners.
A Week(ish) of Eats with Emily, the Crazy Haired Girl! 🙂 My hair is currently in a state of looking like a wild woman… Do you ever have those days that your hair is practically untameable?
Breakfast #1 – I haven’t had oatmeal in forever, and wherever I turn it seems like all the other bloggers are coming up with these delicious looking oatmeal creations, so I finally diverged from my normal routine and had some oatmeal yesterday. Verdict? It was good, and I want to have more.
Breakfast #2 – It’s what I call a ‘yogurt mess’ with almonds, peanut butter, and raisins. A yogurt mess is really versatile. You can always add cereal, other nuts, different fruit, honey, or even chocolate chips… Yep, I like chocolate for breakfast sometimes. 🙂
Lunch #1 – This was part of my lunch yesterday. Egg + asian dressing + snap peas + peppers + pickles + lettuce + provolone cheese makes a tasty equation.
Lunch #1 (Part 2) – Usually a salad doesn’t quite fill me up for lunch, so I scrounge through our almost empty refrigerator for part 2 of the lunch. Although, I don’t normally eat gluten free, we do buy gluten free tortillas for my dad, and there were some in the freezer. So I made one of my favorite childhood meals, a peanut butter and honey tortilla. 😉 Yum. Did anybody else ever have peanut butter and honey sandwiches or tortillas as a kid?
Snack # 1 – I know this is a very typical snack, but it never seems to fail as being both satisfying and well rounded.
Snack #2 – This is evidence of the baking urge I experienced yesterday before picking up my family at the airport. I made some ‘Gluten Free Cinnamon Raisin Bread.’ It makes a great snack covered in butter or peanut butter. One of the biggest challenges with baking gluten free is getting the baked good to stick together as it lacks the normal binding gluten that wheat provides. However, I find it helps when you add copious amounts of eggs, xanthan gum, or guar gum as other binders.
Lunch #3 – Another salad that I hastily put together. Lunch is probably the most ‘look through refrigerator and dump things together’ sort of a meal for me, as the middle of the day is always pretty busy around here. . . Hence the reason this was eaten out of the container. Meals eaten out of a container = less dishes which is always a good thing.
Dinner 1 & 2 & 3 – I had Mac n’ Cheese for dinner three times this past week. I guess that’s what happens after you got Costco and get the package of ‘Annie’s Mac n’ Cheese.’
I decided to only give you one picture of it, lest I bore you with multiple pictures of mac n’ cheese. And might I also mention that extra cheese on top of mac n’ cheese does add just that extra ‘yum’ to the dish?
Dessert – Ice cream. ‘Nuff said. 🙂 We
have had about 5 or 6 containers of Breyer’s icecream that my sister bought on sale about a month ago. We’re working through them.

If you have struggled with an eating disorder, are any of the foods above fear foods for you? I can say that icecream/dessert was definitely a fear food as well as anything with lots of carbs or fat like mac n’ cheese. I’m thankful that I can now eat them with so much more gratefulness than I ever have before.
