I am not normally a coffee gal, but when Nicole Culver share that Kohana Coffee was doing a ‘coffee’ recipe contest, I couldn’t resist entering. I’m probably not going to win, because hey… I’m not the best food photographer in the world, but at least I got to make a really fluffy, chocolatey mocha mug cake recipe to share with all of you, right? This is my first official ‘mocha’ flavored goodie on the blog, so I’m just a little excited about it.

First of all though, let’s talk about reading other blogs. Reading other blogs has been one of the most amazing encouraging ways for me to grow and recover. Lately, I’ve really been realizing that the conversation around ‘healthy’ is truly changing in the blog world.
That THRILLS me to the core. I am just thanking God for it!
Lately I’ve been reading so many posts that have made my heart and my smile explode with joy because healthy is starting to look truly healthy via all of my favorite blogs. They aren’t just talking about calories or exercise any more. They’re talking about life, struggles, success, simplicity, rest, carbs being a FRIEND (not an enemy), and so much more.

Now…. let’s get to the mocha mug cake.
It was simple.
It only took about 2-3 minutes to mix up and another 1 minute to cook in the microwave. I will also not be against you eating this for lunch, like I did. I love the idea of a mocha flavor, because it combines the chocolate and coffee in a way that the coffee is not overpowering, but it adds that rich depth to the goodie that you wouldn’t have otherwise.
I think mocha flavors might appear a bit more on the blog after this; I’m starting to like the idea.
All this mocha cakiness can be yours …. if you need a cake some time soon. 🙂
Chocolate Mocha Banana Mug Cake
|Prep:||Cook:||Yield: 1 Mug Cake||Total:|
A SUPER soft, moist, chocolate mug cake that has a slight hint of coffee.
- 1/2 tbsp. cocoa powder
- 3 tbsp. flour (whole wheat or white)
- 1 egg
- 1/2 tbsp. almond butter
- 1 tbsp. Kohana cold brew coffee concentrate
- 1/4 tsp. baking powder
- 1 tbsp. m'n'm's
- 2 tbsp. applesauce
- 1/2 banana, mashed
- More nut butter and chocolate!
- Mash banana. Add in the egg, coffee cold brew, almond butter, and applesauce. Sprinkle in the flour and the baking powder. Sprinkle in the M'n'M's at the end and give a quick stir. Pour into your favorite (BIG) coffee mug. Microwave for 1 minute. Enjoy! ?
