Creamy eggnog. It’s one of my favorite drinks of the holidays. We drink a lot of it; thankfully my family has been one of the greatest blessings in recovery, because they just don’t look at any food as totally off limits. They’re moderate, but they love to enjoy everything. Eggnog in particular goes so fast in our house, that I had to kind of gauge whether or not I’d be able to share this recipe with you.
But by God’s providence, I am sharing this recipe with you….

Funny Story: Last night my mom came home from the grocery store, and I was putting stuff away in the refrigerator. Lo and behold, I found this cup of yogurt in there from a couple weeks ago! WOOHOO! 🙂 It was definitely a blessing finding that, and it made for some moist little waffles.
Kodiak Cakes Buttermilk Mix – This stuff is seriously SO good, and it makes great bars (Ellie), pancakes, and waffles. 🙂
And of course: Eggnog. – Who else loves that beautiful morning light streaming in the window?

I could drag this on and on, but why don’t we just cut to the chase and get to the waffles.
Eggnog Cinnamon Power Waffles

A soft waffle with the rich creamy flavor of eggnog....
- 1 cup Kodiak Cakes Buttermilk Mix
- 1/2 cup eggnog
- 1 tbsp. cinnamon
- 1/2 cup soymilk
- 1 6 oz. container Siggi's Vanilla Yogurt
- Preheat your waffle iron. While it's preheating mix your ingredients in one bowl until all clumps are gone... The batter should be pourable but not really runny. Make your waffles, top them, and enjoy the blessing of waffles on a DELIGHTFUL morning!
Now before I go, I just wanted to share something that has been on my mind. I’m often not grateful enough for God’s mercy, and Nehemiah 9 has really struck me this week as another reminder of how God is so merciful even when I am a wayward, stubborn child. He gently guides me back to the fold, and His care and longsuffering is just beyond what I can even express.
‘Yet many years didst thou forbear them, and testifiedst against them by thy spirit in thy prophets: yet would they not give ear: therefore gavest thou them into the hand of the people of the lands. Nevertheless for thy great mercies’ sake thou didst not utterly consume them, nor forsake them; for thou art a gracious and merciful God.’ (Nehemiah 9:30-31)
