Today I’m linking up with Heather to share my very favorite recipe from the week. May I present to you ‘Gluten Free S’mores Caramel Cupcakes?’
I love baking but actually developing my own recipes has always been, um… somewhat intimidating. I would always look at recipes and think, ‘Well I don’t think I could ever do that.’
It’s amazing that God enables us to step out in faith and do things that we never thought we could do. When we are weak, then He is strong, even when it comes to baking.
I’ve definitely had my share of failures when it comes to baking experiments. I’ve had really salty foods, not sweet enough desserts, odd muffins, and ULTRA flat cookies, and God has used all of it to keep me humble and continue to press me to try harder, learn more, and grow in this love of mine.
I am so happy to report that this one was a success. After last weeks muffin recipe that was good, but not great, I was a bit scared about this one. I prayed (We serve a God who cares even about the sparrows, and I’m grateful to know that He even sees what I’m baking.), put on my apron, and got to work, and the verdict? My family loved them.
- 3/4 c. brown rice flour
- 1/4 c. potato starch
- 1/8 c. white rice flour
- 1/8 c. tapioca starch
- 1/2 cup yogurt
- 1/4 c. cocoa powder
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 c. chocolate chips
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 package stevia
- 3/4 cup marshmallows
- Preheat oven to 350 degrees farenheit. Whisk together brown rice flour, potato starch, tapioca starch, and white rice flour. Sprinkle in baking powder, salt, cocoa powder, and 1 pkg. stevia. In separate bowl cream together butter and brown sugar. Add eggs and mix till well combined. Add vanilla. Stir well and add yogurt.
- Sprinkle the marshmallows in and give it a quick stir. Spoon the batter into muffin cups and bake for 20 minutes. Let cool and eat by themselves or with a frosting of your choice!
